I love this simple tuna salad nicoise recipe which is quick and easy to prepare. It contains all your important macro nutrients; lean protein, complex carbs, essential fats and an array of vitamins and minerals which work synergistically to help you absorb everything optimally.
Makes 2 portions
- 2 medium eggs
- 200g baby new potatoes
- 200g tuna in springwater, drained
- 80g green beans
- 2 large handfuls of baby spinach
- 80g vine tomatoes
- 80g red pepper
- 1 tbsp red onion
- 1 tbsp extra virgin olive oil
- 1 tbsp white balsamic vinegar
- 1 tbsp fresh parsley, chopped
Boil the new potatoes for about 20 minutes until soft. Drain and refresh under cold running water. Place eggs in a small pan, cover with cold water. Bring to the boil and then simmer for 7 minutes. Drain, cover with cold water and leave to stand. Boil or steam the green beans for about 5 minutes until tender. Drain and refresh under cold running water.
Mix the extra virgin olive oil and balsamic in a small pot, shell eggs and cut into quarters along with the new potatoes.
Arrange all ingredients in a salad bowl, placing the potatoes, tuna, eggs and green beans on top of the salad. Pour on the salad dressing and sprinkle the parsley on top.
