Salmon with avocado salsa

Makes 1 portion

  • 1 salmon fillet
  • 1⁄2 ripe medium avocado
  • 1⁄2 red pepper
  • 1⁄4 red onion
  • 1⁄4 red chilli
  • 1 tbsp fresh coriander
  • 1 tsp fresh lime juice 
  • 100g steamed broccoli or fresh mango

Prepare the salsa by dicing the avocado, red onion, red pepper and red chilli, finely chopping the coriander and squeezing a tbsp of lime juice. Mix together in a bowl and leave in the fridge for 30 minutes.

Preheat the oven to 200 degrees C or 180 degrees for fan assisted ovens. Bake the salmon fillet for approximately 20 minutes or until cooked through and then serve with the avocado salsa and steamed broccoli or fresh mango.
