Lemon Chicken

  • 1 chicken breast
  • ½  garlic clove
  • ¼ tsp sea salt
  • ½ tsp grated lemon zest and juice of ½ good juicy lemon
  • 1 cm piece of fresh root ginger, peeled and grated
  • 1 tsp olive oil
  • Large salad or mixed steamed vegetables

Put the chicken in a shallow dish. Mash together the garlic and salt until you have a puree. Mix this with the lemon zest and juice, the ginger and the oil and coat the chicken breast. Leave to marinate for 30 minutes if possible.

Either bake the chicken in the dish in an oven preheated to180C/ 350F/ gas 4 for 25 minutes or, if you prefer, grill under a pre-heated medium-hot grill, griddle or BBQ. Serve with salad or vegetables.
