This is one of the easiest recipes in my collection and my clients often tell me it tastes amazing. Healthy eating doesn’t have to be complicated or time-consuming. Simple, fresh ingredients used in a complementary way can provide us with interesting and nutritious meals. This recipe uses just a few ingredients and takes 10 minutes to make (including prep time!).
Makes 1 portion
● 1 tbsp olive oil
● 150g chicken, prawns, beef, tempeh or tofu
● 1⁄2 red chilli
● 1 tbsp oyster sauce
● 250g vegetables as desired (broccoli, sugar snap peas, peppers, onion, mushrooms etc)
● Handful of basil leaves
Heat a wok or large frying pan. Pour in olive oil and brown the meat, fish, tempeh or tofu. Add vegetables, oyster sauce and chilli and fry for 5 minutes. You can add a base of cooked, whole grain rice if you like or for a low-carb meal, skip the rice and just eat the protein and vegetables.
