Chicken pomegranate spinach salad

I’ve just created  this quick and simple dish. I’m all for time-efficient meals as I’m always on the go and this is just so quick but provides plenty of nourishing and tasty ingredients to keep me feeling energised. I hope you get the same feeling too!

Makes 2 portions

2 free range chicken breasts

4 handfuls baby spinach

50g feta cheese, crumbled

100g fresh pomegranate

Juice of half a lemon

Grill the chicken breasts for 10-15 minutes or until cooked, turning occassonally. Meanwhile chop the baby spinach and place in a bowl with the crumbled feta and pomegranate on top. You can buy pomegranate ready-prepared to save time as I do. When the chicken is cooked, slice diagonally and add to the salad with lemon juice sprinkled on top.
