This is the first recipe I made out in Australia when I began training to be a Personal Trainer and is still a hit amongst my clients so I thought I’d share it with you today…
It’s a slow-release carbohydrate meal, packed full of vitamins, minerals, essential fat and lean protein. It has nutrients which fight heart disease, cancer and give your immune system a boost. It’s quick to make and low in calories, making it a perfect addition to your healthy eating plan.
Makes 1 portion
½ an orange
40g cooked brown rice
3 ready-to-eat dried apricots, chopped
1 tbsp chopped walnuts or Brazils nuts
1 tbsp chopped fresh mint
1 tsp olive oil
Pinch Himalayan crystal salt
100g cooked chicken
Peel and segment the orange above a plate, retaining all the juices. Place the brown rice, orange segments, apricots, nuts and mint in a serving bowl. Pour the retained orange juice into a bowl and combine with the olive oil and salt and mix in with the brown rice. Add the cooked chicken to complete the meal.
